Jacob Lahne's Thesis: AROMA CHARACTERIZATION OF AMERICAN RYE WHISKEY BY CHEMICAL AND SENSORY ASSAYS, has an outstanding section on the production of Rye and Bourbon whiskey. It is in the History and Production of Whiskey section starting on page 5. Great illustrations also.
