Willett has several rickhouses on location for aging. I assume all of their releases are aged there (Bardstown).
What proof are these 5 years you're seeing? I have had the 3,4 and 6 year Willett ryes, and they were all 110 proof. Today I ran across 40 bottles of the 5 year, but bottled at 100 proof, for 30.99. I was amazed by the price, best I've ever seen for Willett rye, but then I noticed the proof.
Both the 4 and 5yo Willet ryes that I have are 110 proof. They are from about a year ago though.

ChainWhip swung by and we downed some 21-year-old ryes: Hirsch and Vintage.
Ended the night the a pour of Hirsch 22yr rye.
Dark and brooding, with a nose that wants to defy that its a whiskey, I always think ultra old rum with it. Thickly pouring from the bottle in to the glass.
Sweet, rich flavor, little/no hit of alcohol, completely tamed by the barrel over the years, lingering taste. Sticks with you for hours after finishing.
In the empty glass, long legs clinging all around the glass, the type when you have to let them settle, because you can get another small taste from them as the pool. Too good to waste.
Its one of those items that I'm really blessed to have had the opportunity to pick up and enjoy, and share with others! Such a unique creature.
