expert distiller guides you through the process of developing the
mash bill, the distillation specifics, the type of oak and level of char
for your barrel and every other aspect of whiskey creation. We will
source and procure top quality ingredients from around the world,
ensuring that the end result is worthy of the care and effort that
you put into developing your personal recipe.

If you choose to do so, you may participate in preparing the wash,
distilling and finally barreling your spirit. As it ages in the cask, you
will be able to sample it as frequently as you wish, learning how the
oak contributes to the finished whiskey.

When you are satisfied that your whiskey is sufficiently aged, we
proof, bottle and label the contents of your barrel. The end result?

I'll admit that's more than I paid per bottle for JD SB when
buying "in bulk" but the idea of being involved in all aspects
of the creation does have a certain appeal.

I'll admit that my ignorance in choosing a mash bill, oak, char
level, etc. wouldn't guarantee a delicious finished product but
I imagine some of the more refined palates on the forum could
come up with something worth trying.

And they do offer the following should you want to age your own:

"For those that can't wait, we do provide the option to package the
raw spirit in cases of 1.75L bottles immediately after distillation, export
them to your location and supply you with an empty barrel. Assuming
that your regional laws don't prohibit you from storing your spirits in
unlabeled containers, you would be free to pour your bottles into a
barrel and begin the aging process yourself."

occur to me that this might be Group Barrel Purchases option!

I am operation under the assumption (perhaps faulty) that for barrel proof, the per-bottle costs will be higher since there will be fewer bottles to absorb the costs.

Be advised that proof will likely go down as it spends time in the barrel. Portland has a maritime climate, closer to that of Scotland than Kentucky.

Steve McCarthy at Clear Creek (about three miles west of House Spirits) told me that his whiskey loses proof as it ages.

That $4,900 is for a 15 gallon barrel. If you assume 25% Angels Share over four years, you'll be left with 11.25 gallons, which is enough for 57 bottles (750ml). That works out to $86 per bottle.

Plus I'm pretty sure 2/28/08 has long since passed (it has here in Oregon anyway). Reverting to the $5,400 price increases that cost to $94.74 per bottle.
