I just put my first ever batch of limoncello in a jar this weekend. I will post some progress pictures and let you know how it turns out. I screwed some of my supply purchases up, but I think my recipe should work. I used:
2 750 ml bottles 151 Everclear
1/2 bottle of 80 proof vodka
15 Meyer lemons
6 regular lemons
I plan to let it sit until mid July to early August depending on how it looks. Based on my calculations, if I add an equal amount of simple syrup to the above it should bring it down to about 68 proof.
Anyone else tried making lemoncello?
