Drinking a bottle which is 1/2 AAA 10 star and 1/2 NAS OWA 107. The OWA was my first bottle of the new, plastic label, NAS, and I thought it not good at all, nothing like the 7 year age stated stuff I've enjoyed. The AAA 10 star is too sweet, like liquid cookie dough. Rather than stare at the bottles and hope they'll evaporate, I decided to roll the dice and vat them. Together it's a super bourbon that I'm having too much fun sipping. Complex, well balanced, long on the palate, long finish...really good.
I'll be making more of this, and it's got me interested in the possibilities of vatting several of the bottom shelfers which are often one dimensional or too much of a certain flavor aspect.
