Sometimes we'll make turkey enchiladas after Thanksgiving using the thighs, they seem to work best and save the breast meat for sandwiches.
Use any enchilada recipe and substitute with turkey.

Today my Bride got creative and made White Chili.
She looked at a few recipes and subtracted some ingrediants and added some of her own ideas.

2 cups shredded turkey, dark meat.
2 cups turkey broth
2 cans cannellini beans
The above she kept, below she added;
1 7oz can salsa verde
1 teaspoon cumin
2 teaspoons chili powder
A little salt and pepper, simmer for a while and let the ingrediants marry.
And I might add while preparing this have your favorite bourbon on the rocks.
