    First dream: Barrel Proof, Four Roses Straight Rye Whiskey
    - 12 to 15 yrs old
    - not this "barely legal" stuff - at least 70% rye in the mashbill
    - coming off the still at under 140, and into the barrel around 110
    (sorry for all the details, but hey - it's MY fantasy!)

    Second dream: 7 yr old Barrel Proof OWA (or WLW Jr?) C'mon - they could pull that off!

    After reading the posts and giving it some thought I wish for something that is achievable, a return to what was once the standard mark of quality in Bourbon, eight years of age and 100 proof.

    Thank you daryll for mentioning proof off the still. I would really like to try some distilled and barreled at "dusty" level low proof, such as 10-12 year Old Forester, OGD, and Makers/Weller. Would also like (okay, love) to see a return to the older days of WT.
