    Here's the funny thing. I've been perusing, off and on, issues of The Wine and Spirits Bulletin from before Prohibition. Even in the late 19th century, there were trade advertisements with images of various distilleries. Huge, sprawling, industrial complexes not just by the standards of the day, but by modern standards as well. Granted, a lot of those huge complexes were still mashing by hand in little piddlydink tubs, but I have a feeling that that was already well on its way out except for a very few sticklers. Labor saved is money saved, and it was the age of steam-powered machinery.

    Not to derail indeed, however Hillshire Farm said No Nitrates/Nitrites or MSG. If they are taking out some stuff and using better quality ingredients then if the price is right why not? The market will decide if it's worth it.
