I have never cared for Candied Sweet Potatoes, until I tasted these!

6 sweet potatoes
3/4 cup brown sugar
1/2 teaspoon grated lemon rind
1-1/2 tablespoons lemon juice
2 tablespoons butter
3 tablespoons (or more) BOURBON

Peel the sweet potatoes and boil until they are almost tender (about an hour).
Cut them lenghwise in 1/2" slices and place them in a shallow baking dish.
Sprinkle with the salt, paprika, brown sugar, lemon rind and lemon juice.
Dot them with the butter and bake uncovered at 375 for 20 minutes.
Pour the Bourbon over the potatoes after 15 minutes of cooking. Cook for 5 more minutes.
Let them cool a bit and serve!
