I have the same attitude toward food that I have toward bourbon. It is meant to be  shared with good friends not to be kept secret or hoarded.

Not on the smoker, but the first strawberry pie of the spring. We have an amazing local farm that has their own store for their home grown fruits and vegetables. In the spring we buy strawberries. And then by mid July, we buy tomatoes and sweet corn. Oh my, so good.

Prost!  Phil

Cooked some pork cutlets on the smoker today. My daughter loves to help me cook.

Those cutlets look amazing! And the view beyond your daughter and the smoker is incredible.

Have been watching The Chef Show with the wife and decided to try and mimic  the smoked Kalbi (Cross cut short ribs)  recipe I saw. They were making it for a food festival so it was a bit of a guessing game on marinade ratios, but the end result was pretty tasty.  Couple of racks of baby backs on top.

The smoking wood is from the RR Barrel I had chopped up recently. See you in 6 hours!

First attempt on short ribs was decent, but not amazing. Will have to give it another go.

Baby backs fantastic as always. Cooking done, lots of leftovers. Good day.

Phil,

Thanks.  I knew that I was in for a longer cook than I intended when I prepped them.. They just felt tight and I knew that it was going to take low and slow to get them where I wanted them. I treated them like I do my pork butts.  Got them to 160 the wrqped them with some liquid an d put them back on the smoker until they hit 190.  That did ht trick and they turned out tender.

The view is of Hardy Lake in West Michigan.  Our RV resort is on a bluff overlooking the lake and they had to rebuild it a few years ago due to erosion.  When they did, they gave all of us along the river a deck overhanging the bluff.  Some days it is just good to sit out and watch the crazies on the lake rather than getting out amongst them.  On those days, I sit and watch the boat traffic, make my wife a pitcher of "Make me disappears", have  a few drinks myself, fire up the smoker, and enjoy the show.

If you are ever in west Michigan, you should drop by.

Totally uninspired smoking tonight. Baked potatoes with pecan wood.

From weekend before last - cheddar cheese stuffed, smoked meatloaf.

The bacon wrapped one took on less smoke flavor - bur had the bacon flavor so was really good anyway ?

Plus 1.  ?

Looks delish, and I’m salivating. Sadly, I have to be very good the next 2 or 3 months. I know folks are tired of hearing about my surgery, but...  I had surgery on my rotator cuff March 6th. Knowing it was imminent, I was a good boy in the prior weeks. I lost almost 20 lbs. ?  Since my surgery and the subsequent self isolating (as much as possible) due to the Covid-19 pandemic, I gained back all the weight I lost, and added at least another 10 lbs. So, I’m trying hard to climb back on the wagon. Tossed salad with shredded chicken for supper Sunday. Last night it was Asian Chopped salad. ?  Bourbon for dessert both nights though. ?   “Aqui es la vida.”

Bacon Candy for the Old Fo BP gathering. I’ll post my thoughts on that later. The bacon is homemade and smoked twice with WT RRSiB wood.  Came out fantastic.  Hosts then did huge pork chops that were incredible.

It's been a really good day. I've been able to post in many topics today. But this one is dinner. Peppercini and picked spice brined wings, smoking on charcole with oak, apple wood from the orchard, and brand new hickory nuts. They have a Maryland style dry rub (old bay, garlic, coarse salt and black pepper) and will be finished by rolling in everyone's sauce of choice. Cheers. And happy father's day to all the dad's.

Made some ribs today. 2.5 h at 250 then 2,5 h after wrapping. That is where the magic happens for my candybark ribs recipe.   Turned ou great.

Saw a T-shirt I need to buy. It said. “ I like bourbon, my smoker and maybe three people. “

Oh, MAN!   Now, that is a Summer meal to enjoy!     LOVELY!!!!      I'd bury my face in that in a heartbeat, if given the opportunity.
