I am very new to the bourbon world, and I have picked up a couple of bourbons that I thought were terrible and was quick to discard. I wonder how in the world does this bourbon have so many good reviews. Then a month or two later, I figure WTH, why not give it another try to find that I really like it. Not only can bourbon change from batch to batch, as you have said, but I have read that our pallet changes every month. This is a good reason to have many different styles and tastes of bourbon.
