Pork Marinade

I picked up some extra thick chops at the store and decided they'd need some sort of marinade with bourbon it. Anyway, here's what I came up with, and it turned out to be delicious:

Juice of 1 lime

Juice of 2 oranges

2 tbsp of soy sauce

a couple dashes of worcestershire

a pinch of chipotle powder

2 cloves garlic -- crushed

1/4 cup of bourbon ( I used Maker's Mark)

Soak the meat in this overnight ... c'mon Lew, clean it up ... Then grill the pork to 160F. Absolutely fantastic.

I know you're not supposed to even touch marinade after the meat's been in it, but hell, bourbon'll kill anything nasty, won't it? Throw a couple ice cubes in that sucker and drink it!

The beauty of this marinade is that you keep it in the fridge overnight. Hell, you won't even need ice cubes.

The potenial for contamination does worry me however ... just to stay on the safe side, might wanna eat that meat raw on the spot, then we've pretty much covered all the bases; ya think?
