Made a huge batch of beef jerky yesterday. Just finished up a pot of gumbo made with genuine Louisiana andouille and gulf shrimp. I make this once a month in the winter. So good!! Next up, a big pot of Brunswick Stew.

I've switched to using Palmetto Farms too since I found out you coule buy them from Amazon.  Big fan!

Sometimes my cooking schedule gets trumped by my work. So, on deck this weekend: finally,  the Brunswick Stew and definitely some spaghetti pie. For breakfast, some sausage gravy and biscuits,  then some grits and eggs. Gonna be a great weekend.  Pics to come.

Our good bud, Jeff @StarSurfer55...gave me the idea of adding eggs to the grits. So good!!

 It's too cold to do much of anything. 🥶 Super Bowl Sunday will be a quiet one here. Normally I make chili, or my wife makes potato soup or white chicken chili. Since we've had chili and potato soup over the last couple of weeks, tomorrow will be a little different. We'll be having Grandma's Potato Salad, sliced roast beef, ham and cheese on french rolls, and Tostito's scoops with my wifes wonderful homemade buffalo chicken dip. Desert will be, well a couple of things. 😉 We're making a few different batches of Hot Cocoa Fudge today, and we have Baskin Robbins Love Potion 31 ice cream that we bought yesterday in the freezer. 😋

I looked up some recipes, made a version in the crock pot today. 😊

How did it turn out? I use Jamie Deen's recipe as a starting point, but I have made some modifications to it.

It turned out great.  When I'm interested in making something, I will read about 10 or 20 of the most highly rated recipes I can find online.  I get a feel for what they all share, and go from there.

On tasting my results, I thought, this is familiar - Kentucky Burgoo (very similar).

With our big snow day here in Seattle our eating out plans were quashed so a big pot of chili it is. Been in the slow cooker since about 11am and the house smells amazing. Will be digging into in about an hour.

Smoked the chicken breasts at low heat to get the smoke flavor and then finish in the convection oven so the skin is enjoyable. Roasted the vegetables. Looking forward to getting back to normal so the highlight of my weekend isn’t meal preparation.
