Rib roast on Weber 22 kettle w/SnS. Dry brined and rubber with Malcoms AP rub. 325ish and seared at end.  Street corn and baked potatoes on the gasser

I love me some spatchcocked chicken.  Literally spent a whole summer several years ago perfecting my recipe.  Making a strong comeback this summer as the price of beef is super crazy at the moment.  Gets rave reviews and very versatile as it can be finished with any number of sauces or seasonings.   I have been doing a 2-4 birds every weekend depending on if we have guests and we eat the dark meat for meals and slice the breasts for sandwiches during the week.

Meatloaf on the Weber 22 kettle w/SnS using Weber briquettes. Recipe on Weber.com, first time using. Was good. Leftovers tomorrow will be sliced and grilled with the glaze.

That looks delish.  I was never a fan of meatloaf growing up (my moms) but I have enough restaurants around Atlanta do it really well that I embarked on crafting a recipe myself during lockdown.  I've not got one that I and my whole family really like.   I would have thought to grill one.  But I am contemplating smoking one when the weather starts getting cooler again.

Recipe called for crushed saltines rather than breadcrumbs but we used crushed ritz crackers since we had no saltines (who doesn’t have saltines?). I do want to try this recipe on the smoker but the loaf mix was a little wet and I was afraid it would fall through the grates so I used the foil this time.  Next time I’ll use more saltines or ritz crackers than the recipe states so hopefully I can put the loaf directly on the grates.

Best ribeyes I’ve ever made. Got some 2” thick dry aged ribeyes from Stew Leonards for Father’s Day dinner. 4 hr salt dry brine then rubbed with Swine Life Mississippi Grit. Grilled reverse sear on my Weber 22 kettle w/SnS. Not sure if these were grass or grain fed, forgot to ask the butcher. Also grilled some filet medallions the same way for my kids. Baked potatoes and asparagus grilled on my Weber gasser.

That, my friend,  is a world famous Cincinnati chili 5-way!! A bed of spaghetti topped with chili, beans, onion and cheddar cheese.

Right Joe!! Gotta drink an historic Cincy brew! Nearly 40 years ago, early on in my married life, I was drinking copious amounts of Hudie Gold. A case of tall ones ran $4.

So, we decided to stay in tonight since we ran around all day. Another Cincy staple, LaRosa's pizza in the hotel room. Wash it down with some MM101.

Oh man are you making me homesick! Camp Washington is an institution! And man do I love some LaRosa's.

I have a lot of bad memories of mornings after a few too many Hudy's in college.

Yesterday I made chili in the crock pot.  So, for the 4th, there's a big casserole dish in the fridge.

I always start with dried beans, soak them overnight.  I found in my big freezer, some organic, grass fed beef.  That worked very well. 👍

I made a crock pot of Kentucky Burgoo.  It turned out so good.  We ate it for supper two days in a row.  I did my thing, where I read a lot of recipes, see what most have in common.

For meat, I used white meat chicken, and lower sodium bacon.  For vegetables: onion, celery, green pepper, sweet corn, lima beans, okra, potatoes, tomatoes.

There's more to it than that, but just to give an idea.

Sometimes people make it with various types of wild game for the meat.  It seems always more than one type of meat.

I love a good burgoo. Ate a lot of this at one particular BBQ place in Cincinnati before we moved.

If you go to a BBQ place and they have anything like home made beans or greens - it's usually a safe bet.  That's a good use for tasty odds and ends from cooking the meat.

Was a balmy 32c here today (that's about 90 in Monopoly money I believe?), so I fired up the grill. 

 

Marinaded some lamb racks in something mexican-y - lime, salt, black pepper, garlic, smoked paprika, smoked chipotle pepper, ground coriander, ground cinnamon, ground cumin. Turned out excellent. Had with bell peppers, leek, new potatoes, and a few cold beers.

You could tell that the Open Championship was played in some heat. 
 

leeks…over here they’re mainly used in stocks or immersion blended into a soup. At least for me. Good to see them get some grill time!
