DowntownD
I like Aged Gouda a lot (we have a great Cheese Importers pretty close, and they have at least three different Aged Goudas regularly and I've been really happy with the two I've tried so far). ...Dark Chocolate too (Whole Foods in Austin makes a great brick of dark chocolate that's got Sea Salt and Black Pepper in it which is fantastic, but I also like just a good plain dark one or with toffee)....+1 on Oyster Crackers, excellent when trying a few different Whiskeys....and I love Wasabi Peas, but have never tried them with Whiskey. I'll be sure to do so the next time I think about it though, sounds pretty good.
Maddog918
I mentioned that I enjoy some aged gouda and/or oyster crackers with my bourbon. That said, I don't care to drink bourbon when I'm eating a meal. In general I find that it just tastes bland or unnecessarily spicy when I'm eating a full meal. The aged gouda is an incredible addition to bourbon and I have no idea why. It's great on it's own, but it's much better when you've got a nice pour. The oyster crackers have minimal salt and really let you taste the bourbon.Since I'm pretty new to drinking bourbon or any whiskey for that matter. I have been enjoying it neat after dinner. However, I'm going to try the gouda thing and the chocolate sounds nice in the evening as the sun goes down and the california air starts to cool. I can really relax sitting in my front yard with a good bourbon and looking at the mountains.
jburlowski
The chocolate I would recommend is from Vosges. Available from gourmet food shoppes or from Vosgeschocolate.com. Try the Barcelona bar (dark milk chocolate, almonds, and sea salt) or the "to die for" Bacon-Chocolate Bar.... add bourbon and you've got 3 of 4 of the primary food groups.
