does bourbon still age in the bottle?

No, open or sealed it doesnt matter, once the whiskey leaves the barrel it stops aging. A 10 year bottle of bourbon will still be a ten year bottle of bourbon no matter how long you hold onto it.

....and just to elaborate, the high alcohol content makes the bourbon dormant in the bottle, unlike wine or some craft beers that age and improve in the bottle. The only change an open bottle of bourbon will encounter is oxidation over a period of time. See this link for other threads on the same subject.
