gburger Posted February 18, 2011 Share Posted February 18, 2011 I spent the day with Dan Garrison, his staff and some other volunteers today out in Hye, Texas. He his bottling 4,500 bottles of bourbon that goes on sale in April. For the first time it will make it to Austin. We all got a t-shirt and a bottle to take home for all of our hard work. I bought two bottles last year when it came out. I have to say, this batch tastes much better. Very smooth. He will open a new kitchen and cookers this April. His place is growing fast and the bourbon is getting better. Here are photos from the day, looks like my photos included here may not be uploading. I plan on going back and photographing the progress then also.He uses 15 gallon barrels and moves them on a regular basis, so the contents touches the sides more and get the flavor of the charcoal quicker than in a 53 gallon.Dan says that is one reason why his 2 year old bourbon tastes like others 6-8 years old bourbons that sit around in the large barrels.Also the hot Texas heat is a blessing for him. They generally just post when they have something to announce, like a new release, so they don't waste your time reading a bunch of BS. Not that there is zero BS. They are Texans, after all.
