Thanks for the post. How large are the fermentation tanks?

The smallest we are running now is 200 gallons the largest is 350. We are going to put in 4, 1000 gallon fermenters this fall.

Thanks for the quick response. Of all of your distilled products, how many different yeasts are used? (Sorry for the rapid fire questions, but I'm really intrigued by the process and am always trying to compare producers.)

We use one yeast. a dry yeast that is used by many bourbon distillers in Kentucky. It is a good fermenter and always does a good job and has good flavor.
