I have a friend/co-worker that is a bee keeper and supplies me with local honey ... and my wife and daughters love this bourbon, honey based cocktail ...

1.5 oz bourbon

1-2 tbl honey

ginger ale (or Ale 8)

Blend honey and bourbon in an old fashion glass, add ice and fill with ginger ale ... garish with a fresh sprig of rosemary.

My wife and daughters say the sprig of rosemary add a whole new aromatic dimension to the drink ...

Sounds like a nice cocktail. I know any bourbon will do but have you found one that you prefer?
