I would love to know what a barrel proof 8-10yo JD tastes like, maybe a single barrel from the top floor in one bottle and another from the ground level, both in a giff set.

All Jack Daniels is exactly the same, just ask 'em.

WAINWRIGHT stole some of my thunder, but 12 yo ETL at BP would be a winner, as would 12 yo OGD114.

By strange coincidence, I just invented mine in another thread. Other than I said "rye"...

..."sourced from the finest honey barrels of old-time traditional single small batch rye whiskey, carefully aged exclusively on the eighth floor of a seven-floor rickhouse, where the average angel's share is 105% per year, in handcrafted virgin Appalachian white oak proprietary-toasted and exclusive-custom-triple-extra-croco-alli-charred barrels..."

I have had imaginary bourbon. Sometimes I see it in my glass and then the next time I look it is gone.

I think evey distillery should be required to put out a BIB with an age statement of 8 years old or more, and a barrel proofer, also age stated (any age).

Excuse me, I need to send a letter to my congressman.

I think every bottle of Bourbon or Rye should carry on it's label the DSP number of the distillery that made the whisky.

I would vote for this.

7 yr, 100 proof Weller (kinda like the Weller Centennial already mentioned, just slightly more 'realistic' for our bourbon-boom times)... or 9 year old, 100 proof Evan Williams.

I'd fix up a bottom-shelfer currently at mid-shelf price - Early Times 354 8 year @ 100 proof ...

First dream: Barrel Proof, Four Roses Straight Rye Whiskey

- 12 to 15 yrs old

- not this "barely legal" stuff - at least 70% rye in the mashbill

- coming off the still at under 140, and into the barrel around 110

(sorry for all the details, but hey - it's MY fantasy!)

Second dream: 7 yr old Barrel Proof OWA (or WLW Jr?) C'mon - they could pull that off!

After reading the posts and giving it some thought I wish for something that is achievable, a return to what was once the standard mark of quality in Bourbon, eight years of age and 100 proof.

let's amend the '64 resolution to reflect this.......

Thank you daryll for mentioning proof off the still. I would really like to try some distilled and barreled at "dusty" level low proof, such as 10-12 year Old Forester, OGD, and Makers/Weller. Would also like (okay, love) to see a return to the older days of WT.
