Irrespective of the science the closer you get to the Equator the faster the barrels empty. In the Caribbean if you try to age a barrel of rum at sea level the entire contents will evaporate within ten years.

That must have been one depressing discovery.

They just moved the aging warehouses up into the mountains, no problem.
