Hydrometer ????

Reading one of Chucks latest blog and some of his readers comments I realized I've never heard mention of a Proofing Hydrometer in any SB post.

So my questions are:

Does anyone own a proofing hydrometer, do you use it, and how often do you use it?

If you use it do you notice a difference in tested proof versus labled proof or distiller verus NDP?

I picked these up at the local Brew Supply Store for about $30 and use them on occasion when vatting or infusing. I have tested a few bourbons and generally find them spot on. Not sure how accurate it is when infusing because I am not sure of impact of particulate matter.

So how do you calculate a proof when the spirits have already been fermented? I always thought you need a OG (Original Gravity with your finishing Gravity) that is how it was on beer and Cider Start would be a 1.085 finishing would be .996 ABV of 8.5% or there abouts
