Bret Bret
This is seasonal, but I use a 1.5 to 1 ratio and place 5 or 6 fresh fig leaves on top and cover. Make sure leaf stems are removed and leaves washed. Let steep for 8 to 10 Minutes.
BadHatHarry
I use honey on a 1 : 1 ratio. I like it much better than the standard granulated sugar mixture. I have a favorite cocktail, Borbon Y Abejas, that I use it in. It’s very similar to an Old Fashion.
ratcheer
I make it on a drink by drink basis, 1:1. My son tried to make a pint or so for me, and store it in the refrigerator. It became moldy pretty quickly. And I really have no ongoing use for a pint of simple syrup.

Add a little splash of vodka and it will keep for a few months.

Biba! Joe It is also quite true. Everclear works perfectly well as a preservative for simple syrups or other syrups if you happen to have it on hand.
BMartin42
Has anyone had any luck with a low carb or keto version of simple syrup? The low carb diet is working well for my gut and butt size so need to stay true to it.

I haven't used it in simple syrup, but my daughter uses it all the time and swears by it. A bit too in-your-face sweet for me, but worth a try. It is supposed to be interchangeable with sugar (in other words a cup of Stevia is equivalent to a cup of sugar in recipes). I find it to be a little sweeter than sugar so I usually use a little less. However, be forewarned, some may experience gastro related side effects. DNA is actively digested in the stomach by pepsin’s so even if it could cause you to grow a third eye (which might not be such a bad thing, especially if it grows in the back of your head. The back up camera in my car seems useful and I think that third eye could be too!) it is denatured long before it could ever get the chance. Now, if you decide to snort the Stevia maybe you have something...
