This is probably a bit more open than usual but I finally promoted a few that had been sitting idly on the bench (Bookers 25th, HH8, EC23, etc). I'm really pleased with my bunker consolidation, down to 38 bottles now. I've resisted the urge to add unnecessarily to it the past few months.I find myself constantly thinning the herd to keep my overall bunker manageable. I currently have 14 bottles open. My overall bunker is 36 bottles right now, not including scotch, rum, tequila. I try to keep my bunker below 40. I am getting ready to add a few more bottles of favorites...SAOS BP, FR BP, etc. I really haven't noticed a degradation in taste regardless of fill level. Occasionally, I notice a slight change in taste, usually an improvement with some air time. However, I am never sure if this is an improvement in the whiskey or just a change in my palate. Around 200 if you count other spirits. all open at same time with glass next to each one, I bet. that's a serious taste tester taking the bullet to advise us about the good stuff. Maybe it will get better with time, as most whiskies seem to do on here. It's been open since december though, how much longer do I have to wait? :grin: In buying that bottle, I think I was fooled by the marketing and reputation behind JD. Tony Santana Posted April 3, 2015 Share Posted April 3, 2015 Roughly 50 open bourbons, another 15-20 ryes, wheat whiskeys, Tennessee, etc. Plus a couple of blends. A good number of the open ones have only had a drink or two out of them - I decide I have to try a new purchase, and while I usually like it, there are other bottles I return to more often. I think most bottles either improve with a little air or stay the same. I've had a couple that seem to regress a bit - a Willett 10 year and a Four Roses OESF come to mind, both still really good but not as phenomenal as they tasted when I first opened them. I used to decant them into 375s when they got down that low if they had been open for a while and were likely to remain open a while longer, but I don't bother with that anymore. I do find that I'll replace the corks with a Vacu-vin stopper just for a better seal so I don't lose more to evap over time, if the cork seems like it isn't tight. I like having 5-6 varied choices available, but too many more than that can cause me to become indecisive. Doing a proper head count made me realize that I need to consolidate down since I tend to forget what I have opened and keep them in too many spots. Don't have anything to decant it into nor do I have a spare cork that I feel comfortable popping into the bottle. I guess I'll have to finish off another bottle with a similar sized cork before pulling the broken cork out. To that end I poured some Hirsch since the cork looks similarly sized.
