Cleaned up my bunkers yesterday. Now I only have unopened bottles in them.

I cleaned up my 4 Bunkers yesterday and ended up with only 2 bunkers, but now, there are only unopened bottles in them. All my open bottles are in another location and there are far too many of them!

Quick question (slightly off topic) for those who have a lot of bottles open, do you find that the quality/taste will eventually degrade? I have never personally found that a bourbon will taste bad so to speak, but may soften. I am using Private Preserve to protect bottles once they go below half full. Is this overkill?

To get back on point, I have recently run out of bunker space for bourbon, and my "wine cellar" (basement closet that stays around 60 degrees). So need to find more space, or stop over buying bourbon....

I have never personally found that a bourbon will taste bad so to speak, but may soften. I am using Private Preserve to protect bottles once they go below half full. Is this overkill?

I haven't been into bourbon long enough to know if they degrade. I keep one shelf in a kitchen curio type cabinet with glass in it for bourbon with 8 - 10 bottles (mostly open) on it. Once one empties I go downstairs to my utility shelving and grab another 1 or 2 to replace what I emptied recently.

Add more shelving to the closet? Our basement stays cool too (even in the summer) so I just reorganized some of the utility shelving we have with particle board shelves to make room for my ever growing hoard. I am trying to put the brakes on buying for a while as I went a bit over board the past couple months but even if I slow down I doubt I can stop buying faster than I drink it.

Nice collection of Weller. My bottles of WSR and OWA are almost gone but there's still plenty left at the stores up here.

Yes, I loved OWA107 on my first bottle. Have a bottle of it + WSR in the bunker and plenty on the shelves.... but wish I could find a W12.......

No, not really, I've had a few opened ones that sat in the back unnoticed (forgotten?) for several years. They will change a bit as more oxygen gets in the bottle but not go bad or anything. They may have even gotten a bit better.

You hear a lot that if a bottle gets past 1/2 full that you should move the remaining content into a smaller bottle to avoid degradation. I had a bottle '13 Lot B that sat at 1/4 full for months after being 1/2 full for months so I was worried about it. Seems it actually got better though. That last 1/4 bottle's worth was out of sight.

I have few open for two years and more that have been open one year. i haven't noticed any difference in quality/taste so even if they have changed and I can't pick it up it doesn't really matter.

I occasionally use Private Preserve myself, especially if a valued bottle hits the exact note I want from it, and don't want it to change at all. I'll also wrap some plumber's tape around the neck/cork sometimes.

This is interesting. I had a bottle of Jefferson's 18. I was a bit less the 1/8 full and I noticed a change as it aged. It was open less than 2 years and it definitely degraded. I would really like to a can of Private Preserve. I know Amazon sells it. Have never seen it in a wine shop.

Here you go. All my open bottles. 38 total, but only 18 related to Whiskey, Bourbon & Rye. Some of these bottles are 7/8 years old, mostly not Whiskey related. Most others are 4 years or less.

The Monkey 47 is absolutely amazing! It is the best gin, I have ever tasted and for awhile, I was really into gin. It is so complex that it rarely ever taste exactly the same from pour to pour. There is really almost too many flavors to pick them out. The flavors that seem to almost always be there, for me, are Juniper, Pine Nuts, Sage and Rosemary, Heavy Juniper, but there are many others as well. As I said, for me it's really different with every pour! You have got to Love it! It is expensive, but very well worth the coast!
