What Am I Missing?

So I am new into the whole bourbon world and I am already hooked. Right now I am just going off what I read and what a few others say I NEED to have, but I want to know what I missing that I MUST add to my current stock. This is what I currently have:

 

Elijah Craig 12 year

Elijah Craig Small Batch

EH Taylor Small Batch

EH Taylor Single Barrel 

Blantons Single Barrel 

Stagg Jr

Woodford Reserve 

Old Weller Antique 107

Larceny 

Angels Envy Rye 

Knobb Creek Small Batch 

Old Forester Birthday Bourbon 

 

I know I have gone crazy, but I am already loving tasting these and learning more and more about bourbon.

I know I have gone crazy, but I am already loving tasting these and learning more and more about bourbon. 

Make sure you add some Four Roses SiB, Buffalo Trace, and Eagle rare 10 yr in there. Just keep trying them all!! I did the same and bought a bunch of top shelf. I am now going back and trying mid to lower shelf bourbons in the $20-$30 range.

Anything smooth ambler old scout needs to make the cut. I like the 7 yr.

Welcome Mike!  I'd say you've already got yourself a pretty good lineup, but I will second the motion for the 4RSB.  

 

BTW, don't overlook the bottom shelf.  There's plenty of good value to be had down there...

For my dollar and palate I respectfully recommend any bonded bourbon. Beam, Evan Williams, Old Grand Dad, Henry McKenna, Dant and their close cousins, Wild Turkey 101, Old Forester Signature, Fighting Cock, and OGD114.  I'm a cheap bastard and when I sip from the above list I always think how damn good they are for the cash outflow.

Welcome to the Asylum Mike. It's a rabbit hole with no end, you will come to know what you like, try as many different pours, expressions as possible. One of my recommendations has to be Evan Williams Single Barrel...another a little more costly would be Pikesville Rye 110 proof. Experiment, and know you are never wrong, what your notes are in the nose are your experiences, what you taste on your pallette is yours and yours only.

Mike - you'd be doing yourself a disservice if you didn't buy some Buffalo Trace - delicious, well-balanced, and relatively inexpensive. If I was stranded on a desert island, and had only once choice of an easily available bourbon, it would be BT.

I would echo every one of the recommendations above. I saw you already have the standard bottling of Knob Creek and would suggest that you add to that the Single Barrel Reserve if you are enjoying KC. I think it has a great concentration of flavors and a finish for miles. I like to pour it, give it a little water, and then walk away and wait a while for it to breathe and open up. It makes a fun comparison side by side with the standard bottling.

check out the whiskey tree for each distiller and mashbill here:  (click the subject line "Reply to Whiskey Tree" to take you to the thread and post you need)

 

See where what you have fits in and see what distillers/mashbills you haven't experienced yet.

I'd recommend:

Wild Turkey - 101, Rare Breed, and Russell's Reserve 10yr

Beam - Beam Black, Booker's

and anything available locally for $15-$30 not already listed 

 

And no, you haven't gone crazy, you're just enjoying a new hobby!

I want to echo everyone by saying, "Don't overlook the bargains!". There are some great $10-$25 bottles out there that can help you stretch those "special occasion" sippers. Anything Bonded...my favorites are EW BIBOGD BIB(both for less than $20), and Henry McKenna 10YR SiB BIB (although at around $30, it's at the top of my budget).
