Good info here. Barrel entry proof of 107, using both 3 and 4 char barrels, and yeast changes w/ distillation season. Very curious to try their juice when it is ready. Sounds like Marianne Barnes and company have some good things going on.

C&K tour was the highlight of my bourbon pilgrimage last Dec.  No finished product to taste (obviously) but the new make off the still was very promising.  Next time I head that way C&K tops the must stop list to see the resto progress - if they're still doing the resto tours.

Very curious. They come off the still at 135 and barrel at 107. Bottling  at 100, shouldn’t be much cutting.

The private C&K tour for the SB group last April was one of the highlights of our get together. Check out last year’s Sampler thread for lots of pictures.

Depends on where in the rickhouse the barrel comes from. Top level could end up close to 120. Their ricks are in a valley though so that might mitigate some of the heat up top. It will be interesting to see where these barrels end up in 5 years.
