Peoria Whiskey Industry

It is little remembered today that Illinois was once a whiskey producer to rival Kentucky. The Hiram Walker plant there was the largest distillery in the world, with a mashing capacity of 20,000 bushels of grain per day. Today that plant is owned by ADM and used to make grain neutral spirits. Here's a web site I found that has a little bit of information about the Peoria industry.

Anyone interested in learning more details of Peoria's contribution to The pre-Pro Industry should locate a copy of "Peoria Spirits", a 57-page treatise chockablock with information published by the Peoria Historical Society in 1996.
