Bourbon and Bacon

Ben mentioned that folks were asking about where I got the bacon for the NY sb.com get together. I buy it from Broadbent Foods. My favorite bacon of theirs is the cinnamon bacon that is hand rubbed with cinnamon, sugar and other seasonings, before smoking with maple. I grew up around around a hog farm so I love me some bacon. Try wrapping bacon around fresh, young okra and putting several on a skewer to throw on the grill. yum.gif

Well, Tonya you are correct about loving some of that bacon you and Ben provided us with at the NY SB Part 2 'fest'. It was delicious and by far the best bacon I have ever tasted in my life. Thanks for sharing the site and hopefully it will be added to my cuisine for Sunday morning breakfasts! yum.gif

PS: Is it possible to get a hold of the recipes for those biscuits and grits? A little southern breakfast would do nice as a change of pace before going to Kentucky. This is also nice if the weather is not cooperating on a Sunday morning because cooking and baking in the summer is impossible. (Well at least in my book, it is wink.gif )

The use of cinammon would suggest an Italian influence as I know some Italian bacon is rolled in cinammon, bay leaf and other spices. I would not think it is Southern or other regional U.S. but of course it may be, possibly a local practice which found its way to this shop. Course if it's good, it doesn't matter where it comes from or the influences.

Like bourbon recipes, at one time there must have been a couple of hundred or more regional bacon cures in America..

My favorite bacon ever was called Maple Valley that I used to get here in St Louis but has disappeared in the past year. That sweet maple syrup taste was there and the current offering from Schnucks supermarket burns easily and tastes like crap. The cinnamon does sound quite tasty so I might have to dust off the old Hotel and Restaurant Management diploma and do some good old fashioned home testing. I get fresh bacon from an old friends meat market when I go home to visit my dad. That should prove to be a great test subject. yum.gif

The only problem I have with Broadbent bacon is deciding which variety I like best.

I discovered it as a by-product of my search for a ham to match the ones I remembered from my childhood. Every time I ordered a sample of a new ham, I would throw in some bacon. That experience transformed my regard for bacon. I now wince when I eat most store-bought bacon.

I never did find that perfect ham.

I know what you mean. I ordered a sampler pack the first time so I could eat myself stupid deciding which I like best. lol.gif
