pepcycle
The Sazerac back sheet lists Rye as Large Grain and Corn as Small Grain. Seems Odd.

Sweetmeats
Quick question...anyone know why Sazerac says 18 years when it was Spring 85 to Fall 05? Is that because some of it may be from 87 instead?
barturtle
Sazerac is a rye whiskey. Also, notice that Saz is the smallest batch by barrel count and it lost the most due to evaporation. Pretty limited amount left.
TNbourbon
Quick question...anyone know why Sazerac says 18 years when it was Spring 85 to Fall 05? Is that because some of it may be from 87 instead? The label has to note the youngest whiskey in the bottle. The whiskey can be older than stated, and often is. It is an expensive and time-consuming thing to get federal approval of a new label. So, they don't change it -- but, you know the age by looking at the hand-written info. barturtle
Another option is the same one used by A H Hirsch and Van Winkle: put it in stainless before it gets too old. The 16yo Hirsch was put in stainless, whereas the 20 wasn't, and Julian put the rye in stainless as well (IIRC, he said it was about 18yo when it went in.)But that is interesting that the Saz is the only one without an age at bottling statement.Anyone have one of the previous years' sell sheets on the Saz? Say, last year and the one before? I know the 2003 bottle lost the barreling date where the first 3 had one on the label.
AVB
The loss to evaporation seems really high. I'm more used to dealing with scotch and you don't see 60% loss until it gets REALLY old, well past 30 years. The 50 yo Glenfiddich I have I don't think reached 60%. barturtle
I've heard rumors that the "pores" in the wood get clogged as the barrels are reused.More likely, the cooler climate and seaside humidity slow down the evaporation rate.
