Jono
http://www.beantownbaker.com/2009/08/vanilla-peach-bourbon-jam.htmlJust on a hunch I thought somebody has tried to use bourbon in jams and I was pleased to find the above recipe...sounds delicious. I love peaches too!I eat peanut butter and jam on toast almost every morning. Jams also contain high amounts of the fruits antioxidants and polyphenols etc....usually they retain about 60-80% of what the juice contains. So eat up!http://www.blogcatalog.com/blog/health-outlook/6cb85d330026b70eef9b859cccf75165http://www3.interscience.wiley.com/journal/118756587/abstract"The results indicated that more than 73% total phenolics and more than 65% antioxidant capacity were retained after processing fruits into jams. Optimization of food processing would help to conserve the bioactive phenolic compounds in fruits."
NeoTexan
A few years ago Emily made some bourbon jelly. She put it in cocktail glasses ("martini glass") and sealed with clear wax. We gave them as gifts to some of the employees of a certain distillery.Turned out quite good.
