Smoked refried beans w/ bourbon

Something I like...

2 cans fat free refried organic black beans

3 chipotle peppers - home smoked or store bought dried

2 red bell peppers, smoked (I use oak or mesquite)

3 Tbsp ghee or butter (got to take care of that fat free part!)

2 Tbsp honey

other spices to taste (mexican oregano, turkish / syrian red pepper flakes, ground pepper corns, etc)

salt

a pour of bourbon

cook it up, let it sit overnight

A couple oz if it is something I have on hand to drink, more if it is something I'm trying to get rid of, maybe 4-5 oz. Might use a little water to get the simmer going, then stir in the bourbon once it is evenly heated.

So if I'm putting in Pappy I'll only use... just kidding! The best I'll use is Buffalo Trace regular, I think I used Basil Hayden the first time and might have had the idea while having a sip - maybe Rye is a good idea now that you've made me think about it. I now only use stuff that good if I've had a couple drinks and forget about stuff in the back of the cabinet.
