OscarV Posted November 25, 2012 Share Posted November 25, 2012 Sometimes we'll make turkey enchiladas after Thanksgiving using the thighs, they seem to work best and save the breast meat for sandwiches.Use any enchilada recipe and substitute with turkey.Today my Bride got creative and made White Chili.She looked at a few recipes and subtracted some ingrediants and added some of her own ideas.2 cups shredded turkey, dark meat.2 cups turkey broth2 cans cannellini beansThe above she kept, below she added;1 7oz can salsa verde1 teaspoon cumin2 teaspoons chili powderA little salt and pepper, simmer for a while and let the ingrediants marry.And I might add while preparing this have your favorite bourbon on the rocks.
