Started with a very small taste of a sample - Wiser's Very Old, an 8 year old, 80 proof Canadian distilled in the '70's. Very smooth, rather sweet, with a slightly spicy finish. Moved on to ERSB, then decided to revisit my JPS18, which has now been open a couple of months. What a huge improvement. It's no longer one-dimensional (wood). The nose is caramel, the taste is sweet (where it was dry) and toffee and just the right amount of wood for balance. The finish is long, and sometimes a bit hot, but not on every sip.It's probably fair to say that this is now one of the most interesting bourbons I've had, which is a 180 degree turnaround from where I was when I opened the bottle. Project drink down is now complete. Only 2 bourbons and 3 ryes open now. Only "daily" drinkers left are a Willett Rye and High West RR. Tomorrow will be exciting get to open something new. It amazes me how much our bourbon can change once opened. With all this talk of Makers dropping proof, I pulled my Abraham Bowman 17 yr old 140 pf bottle out and took it down to ~110 pf. Way more flavors come through at this low proof. That's not the same as the Bowman Rye at 138.8 is it?I've got a Bowman sample here that I've only nosed. It's very dark, and smells like it is very high proof, but it's not marked.And I made a typo on the Wiser's Very Old, it is an 18 year.
