I also didn't realize that nitrogen affects a beer's flavor and aroma. As much as I love a creamy, silky pint of Guinness, this article makes me really want to try a pre-nitro glass of Guinness where the barman mixes the older "low cask" and newer "high cask" to achieve the desired profile and carbonation level. Brewing and distilling have such an "Art vs Science" romanticism to them, that I can't help but think how many in the brewery ( as well as their customers) must have thought it heresy that a bunch of math "geeks" descended upon their brewery to "fix" their problems. I bet there was much pushback from many corners. Similar I'm sure to modern bourbon distilling at our favorite distilleries as science has become such a huge part of the process, even if the marketing message promotes the old time ways. Interests stuff to think upon and contemplate. Perhaps, in 60 years bourbon drinkers will read a similar quaint story about the pasts of that future times whiskey giants Cleveland Bourbon, Terresentia, and Lost Spirits, and how they were game changers in the bourbon world with their scientific adaptations to old time practices...?
