Using Pappy aged maple syrup

My wonderful wife gave me a bottle of maple syrup that was aged in a Pappy Van Winkle barrel. I wonder if I could use it as a substitute for simple syrup in an old fashioned. 
 

Any other cocktail ideas? I’m not a huge pancake consumer. Nor do I have enough of a sweet tooth to make some baked goods.

Cocktail duty is a perfect use for it. I do it all the time. Doesn’t mean you will like it but give it a shot and let us know.

I love a good "Great North Woods" every once in awhile. 2oz of bourbon, 1/2oz of lemon juice, 1/2oz of maple syrup in a rocks glass. Add ice, top off with a lemon wedge, splash of club soda (optional), and some bitters. Enjoy!

If in a cocktail you will want to balance out that sweetness with either a type of citrus, a type of spice heat such as fresh ginger or cayenne, or both. I find additional sugars can get cloying pretty fast, especially with some already sweet Bourbon as a base.

 

Or just use it on your oatmeal in the morning and call it good...

Maple syrup is a solid replacement for simple in an Old Fashion and most drinks that call for simple. Though generally I would use a little bit less if using maple syrup because it has a stronger flavor. For instance, if making a sidecar I would do 0.75oz rather than 1oz.
