Honey Bourbon Chicken Breast

I baked some chicken breast tonight, and it came out quite delicious. Thought I would pass this along incase anyone else would like it.

-4 large Chicken Breast

-1 cup Honey

-1/2 cup Bourbon (I used Wt101)

-1/2 cup Butter

-1/4 cup Lemon juice (fresh queezed if possible)

-1 teaspoon Salt

In saucepan, mix honey and butter. Heat til bubbly. Remove from heat. Stir in lemon juice, salt and Bourbon.

I put the Chicken in a glass baking dish, and covered with half of the sauce.

Bake Chicken at 325F. I removed pan, rotated chicken and applied more sauce every 25-30 minutes. Cook Chicken to 185F, about 1 1/2 hours.

Semi-glazed is appropriate I guess. The sauce was just thick enough to stick, but not baked on. I still used a little Sweet Baby Ray's BBQ sauce on it though.

Just tried this recipe this evening. Fantastic! The sauce seems like it might make a good simple marinade, too.
