I'm under the weather, but I don't think it's entirely my fault. I think this whiskey is hot. It's spicy on the palate with nice notes of mango and lots of black pepper. Sometimes it seems wooded and a little closed. Other times, such as now, it is lively, sweet, oaked but just right.It has a very nice perfumed undertone from the way the rye element aged, something generally I don't find in any bourbon although Rare Breed gets it sometimes.I raise my glass to Julian, whom we see too rarely on the board these days.Gary Link to comment Share on other sites More sharing options...

Gillman Posted February 16, 2008 Share Posted February 16, 2008 For my second dram, Weller 107 (a vatting of different ones, but all the same brand) in a snifter to which I added a dash of mixed bourbons that I use for Manhattans. The mix is based on WR, and its lanolin-like top-note comes through the 10 or so bourbons in there. When you add just a dash of this to Weller 107, the profile of Weller 107, which has its own particular, perfumed taste, is maintained - which is what I want. But what is added is a depth, a heft, from the rye-recipe bourbons in the mix, they give a "center" to the Weller 107 which it lacks by virtue of being the age it is and wheat-recipe. I think I bought this in 2002 at the distillery.Mild nose, it seems drier that some my other bourbons even at 90.4 proof, fairly lively mouth but the taste is not as complex as some. Those who like it, good for them. To each, his own. But I'll probably never give it a shot, kind of like Bakers and Basil Hayden.Oh yea, I had this year's GTS. I watered it down to about 110 proof. They have 35 bourbons and I felt right at home.I started with an Old Fashion with Wild Turkey Kentucky Spirit and after dinner a Weller Centennial neat.My wife had The Kentucky Bedwarmer a drink that they invented, it consists of;Blenhiem Spicy Ginger AleVery Old Barton 90 proofOrange CuracaoGary Reagan's Orange BittersI had the Texas Cabrito sandwich which consists of slow smoked hand-pulled free range goat.They feature recipes from all over the country especially the South.Look over their menu at www.zingermansroadhouse.com this is a very unique place.
