View Full Version : What To Do With Left Over Turkey?

Sometimes we'll make turkey enchiladas after Thanksgiving using the thighs, they seem to work best and save the breast meat for sandwiches.
Use any enchilada recipe and substitute with turkey.

Today my Bride got creative and made White Chili.
She looked at a few recipes and subtracted some ingrediants and added some of her own ideas.

2 cups shredded turkey, dark meat.
2 cups turkey broth
2 cans cannellini beans
The above she kept, below she added;
1 7oz can salsa verde
1 teaspoon cumin
2 teaspoons chili powder
A little salt and pepper, simmer for a while and let the ingrediants marry.
And I might add while preparing this have your favorite bourbon on the rocks.

Sounds great. If you wanna make that chili creamier and richer, add some heavy cream and sour cream, then cook it down a bit. I also like hominy in my white chile.

I'll definatley keep that in mind.
Another thing my wife made with leftovers was on Friday she took left over stuffing and lined a pie pan with it and made an egg & spinach quiche, that was good also.
She saw it on the Food Channel, but she did it.
