As I may have stated before, my problem at the moment is the ones I have open now, are either ones I don't want to finish because they are good ones that I want to savor as long as I can, or ones that aren't particularly that great, and it will be tough finishing them. Does oxidation increase over time and as the bottle level decreases?The short answer is yes, as the contents decrease, that leaves more room for air to enter the bottle and accelerate oxidation. I have many bottles that have been open for years and I haven't noticed an appreciable decline in taste. If a particular bottle gets down to a low level, sometimes I'll transfer the contents to a smaller bottle (e.g. 375) if I don't plan on finishing off the bottle in short order. If you tend to finish off a bottle quickly (say within a month or two), I wouldn't worry about it. My problem is I have too many bottles open so killing off a bottle for me takes longer than most. Does oxidation increase over time and as the bottle level decreases?i just invest in a few bottles of wine preserver and never really have to worry about oxidation. Some people tend to be more sensitive to picking up off flavors from oxidation, myself included. The wine preserver places a layer of CO2 that settles over the whiskey (as it's heavier then oxygen). It's rather cheap and allows me to keep many bottles open for long periods of time, without worrying all too much about it. I also transfer the last 4 oz to a small 4 oz bottle and label it, that's if I don't have plans on finishing it. Great for going back and comparing to other bottles, if need be.
