And back to the thread's question.

I am down to five open bottles;

Elijah Craig 18yo, barreled 2-18-92

Old Weller Antique 7/107, a 2006 bottle and the best OWA I've had

Elmer T Lee 1B 15yo, sadly a one time only bottling

Willet 17yo 133.2prf, Reid & Emerald selection

Wild Turkey Kentucky Spirit, 2-13-01 Pewter Top

That's two wheater's and three ryed boubon's, it should get me through the weekend.

But I really need to open up a Four Roses, I just may open up a Rutledge 40th soon.

And back to the thread's question.

I am down to five open bottles;

You're my hero Oscar. :rolleyes: I would love to get down to five bottles open.

As I may have stated before, my problem at the moment is the ones I have open now, are either ones I don't want to finish because they are good ones that I want to savor as long as I can, or ones that aren't particularly that great, and it will be tough finishing them. Cheers! Joe

I have significantly reduced my open whiskey collection. Here is what is currently open:

Weller12

ERSB

Corsair Rasputin

Corsair 100% Aged Rye (Batch 1 & 2)

Corsair Triple Smoke

And that's it. A far cry from where I was several months ago, but I can say with confidence, I have thoroughly enjoyed finishing off all my higher end bottles.

My current open list is:

EC12

EC18

ER 10

WT101

WTRB

PVW 20

Knob Creek

Weller 7

Van Winkle Rye

That seems to be about the right amount to keep open for me. Gives me variety while not leaving anything open for years.

Are there limitations with how long you have to drink a bottle once it's opened? Does oxidation increase over time and as the bottle level decreases?

The short answer is yes, as the contents decrease, that leaves more room for air to enter the bottle and accelerate oxidation. I have many bottles that have been open for years and I haven't noticed an appreciable decline in taste. If a particular bottle gets down to a low level, sometimes I'll transfer the contents to a smaller bottle (e.g. 375) if I don't plan on finishing off the bottle in short order. If you tend to finish off a bottle quickly (say within a month or two), I wouldn't worry about it. My problem is I have too many bottles open so killing off a bottle for me takes longer than most.

What Greg said. I never post this inventory because it depresses me to realize how long it will take to empty the open ones in order to get to the closed ones!

i just invest in a few bottles of wine preserver and never really have to worry about oxidation. Some people tend to be more sensitive to picking up off flavors from oxidation, myself included.

The wine preserver places a layer of CO2 that settles over the whiskey (as it's heavier then oxygen). It's rather cheap and allows me to keep many bottles open for long periods of time, without worrying all too much about it.

I also transfer the last 4 oz to a small 4 oz bottle and label it, that's if I don't have plans on finishing it. Great for going back and comparing to other bottles, if need be.
