We have an amazing local farm that has their own store for their home grown fruits and vegetables. In the spring we buy strawberries. And then by mid July, we buy tomatoes and sweet corn. Bob_Loblaw Posted May 31, 2020 Share Posted May 31, 2020 Have been watching The Chef Show with the wife and decided to try and mimic the smoked Kalbi (Cross cut short ribs) recipe I saw. They were making it for a food festival so it was a bit of a guessing game on marinade ratios, but the end result was pretty tasty. Couple of racks of baby backs on top. StarSurfer55 Posted June 1, 2020 Share Posted June 1, 2020 Phil, Thanks. I knew that I was in for a longer cook than I intended when I prepped them.. They just felt tight and I knew that it was going to take low and slow to get them where I wanted them. I treated them like I do my pork butts. Got them to 160 the wrqped them with some liquid an d put them back on the smoker until they hit 190. That did ht trick and they turned out tender. The view is of Hardy Lake in West Michigan. Our RV resort is on a bluff overlooking the lake and they had to rebuild it a few years ago due to erosion. When they did, they gave all of us along the river a deck overhanging the bluff. Some days it is just good to sit out and watch the crazies on the lake rather than getting out amongst them. On those days, I sit and watch the boat traffic, make my wife a pitcher of "Make me disappears", have a few drinks myself, fire up the smoker, and enjoy the show. Knowing it was imminent, I was a good boy in the prior weeks. I lost almost 20 lbs. Since my surgery and the subsequent self isolating (as much as possible) due to the Covid-19 pandemic, I gained back all the weight I lost, and added at least another 10 lbs. So, I’m trying hard to climb back on the wagon. Tossed salad with shredded chicken for supper Sunday. Last night it was Asian Chopped salad. Peppercini and picked spice brined wings, smoking on charcole with oak, apple wood from the orchard, and brand new hickory nuts. They have a Maryland style dry rub (old bay, garlic, coarse salt and black pepper) and will be finished by rolling in everyone's sauce of choice. Cheers.
