This is my first mezcal and I’m struggling with the smokiness. I know it’s supposed to be a signature flavor but it seems overwhelming. One of the first things I learned (and forgive me if everyone else already knows this) is that mezcal is to tequila as whiskey is to bourbon. in other words, all tequila qualifies to be mezcal, but not all mezcal qualifies to be tequila. At a minimum, that disproves the old adage that "all mezcals are smoky.." Most of them seem to be smoky, but the amount of smokiness varies a lot, so if you find one that is too smoky, you may want to try a different one. I've tried three so far -- one was so smoky that I felt like I was smoking a cigarette while I was drinking, but the other two were significantly less intense. All three also had a lot of different flavors that tequila doesn't seem to have. So, I guess I'm just trying to say don't give up -- keep hunting.
