Here it is.  I have a lime.  I have mint.  Oh, and ice…but need to crush it…🤪. I need to buy everything else!  Since @tanstaafl2has nearly bankrupted me with all of the precise Amari I have purchased to match the Master’s specs in other cocktails 🤣, I have been  hesitant to go all in on his Mai Tai!  But, he ain’t let me down yet, so TW, here I come tomorrow!  😁 Particularly, after seeing your pics in Paradise!

I didn't take photos, but I tried rye Manhattan with wt101, and one with baby saz.

 

The WT was much more flavorful, I liked that one a ton more.

Yup! 'Baby Saz' is a very easy drinker neat; but, isn't a good choice for most cocktails.  Not that I am anybody's authority on cocktails.   Sazerac Rye just has so little rough edge and is such a refined take on straight rye, it doesn't contribute enough "oomph" for a cocktail . . . unless all the other ingredients are very subtle . . .  or used in diminished quantities maybe.   Always fun to experiment though eh?

I was going to serve this to some friends for the 4th but I tested it last night and it was awful.  Looks great, but tastes like Robitussin and diet 7-Up.  The layers are 1 oz grenadine, berry-flavored mineral water to nearly fill, and a mix of 2 oz vodka and 1/2 oz blue curacao.  Varying the ingredients and proportions helped a little, switching rum for the vodka, but it still tastes like a really bad soda pop.  Maybe it would be enjoyable to people who like 'vodka and 7.'

 

'I may give it a few more tries this morning--any suggestions?

Sorry, I just saw this today, so probably too late to help.  Without tasting it, I'd guess that the curacao and grendine together are making it way to sweet.  Thus, I might try one of these:

  • Add bitters.  I'm not sure this would help, but it might counteract some of the sweetness.  Use something with a flavor you already have in the drink, like orange bitters, to avoid muddying the overall flavor.
  • Replace the curacao or the grenadine with a similar colored juice (avoid sweet ones, like grape).  I realize this compromises the amount of alcohol in the drink, but you could use a higher alcohol content rum/vodka.
  • Replace the rum with a funkier rum -- a good rum-funk will can cover up some sweetness.

Thanks! I have been trying to harken back to my bartending days 35 years ago when I was much more intuitive about these things.  I played with it this morning and I think it improved by doing 1/2 grenadine and 1/2 Aperol.  I am going to experiment further in the name of science.  If I come up with a winner I will report back.

I haven't been very impressed with it straight either. 

 

It's got some sweetness going for it, but there's not much complexity there.

4 Roses email from this week had a recipe for a Bourbon Strawberry Smash. Going well on the hot and humid Friday afternoon.

What recipe are you using?  We weren't wild about the very traditional recipe posted here earlier and it was not like the 'Mai Tais" we have had in Hawaii.

It’s like the traditional recipe. I’ve had Mai Tais in Hawaii that are like this but have also had the extra sweet ones with a dark rum float.
