Not really on the menu, but I just had to post this somewhere. 🤨


It really cooled off here last night. We opened up the house and enjoyed the cool breeze. This morning, a nice breeze is still blowing cool air through the house. My coffee mug is full. I’m listening to some smooth jazz. My wife is baking a couple of batches of chocolate chip cookies. So, coffee in my cup, good music playing, and the smell of baking chocolate chip cookies wafting through the house. “Don’t git no better’n this Vern.” 😎


Oh yeah, I’m the taste tester too.😋

Every time I see this being done I get envious, because I’ve never tried it.  Perhaps, tomorrow!  Any tips:secrets you could share?

1 gallon bag, sesame oil, olive oil, granulated garlic, rosemary, viva Italian dressing (I know that’s cheating) course salt.     Enjoy.

Since it is now Autumn and the color is coming in, I think I will make a Carbonnade ala Flammande this weekend.  It is a hearty stew that I have posted on in the past.  One of our favorites.

I made my carbonnade this weekend.  It turned out great.  Paired with a crusty bread and a GUiness (since there is a Guiness in the stew, logical pairing).  After Supper, I paired it with a variation of a Maple old fashioned.  I use lemon juice in mine so it is more like a variation on a Bees Knees than an old fashioned. image.thumb.jpeg.480400483f64afb1bab71e2ba0707428.jpeg

Creamed Eggs on Toast is our family’s ultimate comfort food after a tough day.  I like to throw a little hot sauce on to give it some oomph!, but had some chives around, so put them on, too.  Chives!  Wowza, these work great!

Since Littlesmokinjoe is vegetarian, she wanted her birthday dinner at an appropriate restaurant for her birthday dinner.  Went to “Herban Fix”, a vegetarian restaurant In Midtown Atlanta.  The food was glorious.  What they do with plant based “meat” is beyond great.  While my entree was an eggplant with veggie chutney, even sharing the ladies chicken, beef, etc, dishes were outstanding.  I’ve heard that even their plant base steak is outstanding.  I’ll get that next time.

I’ve always been surprised by how many people I meet who when talking about fast food burger joints. Positively spooge over Wendy’s Chili.  It’s almost like a Fan Cult.  I think I have only had it once or twice, and found it OK.  Since the vast majority of fast my fast food is eaten while I’m driving the car, eating chili just seems risky in a number of ways!  🤣.  So, I picked up a can at Publix last week, and having it for lunch now.  I don’t know how similar this is to what you get at the restaurants, but it’s good.  Not as good as my chili…😉but good, nonetheless.  I’ll buy again.

The best thing about smoking a big brisket, is that you have leftovers that you can freeze for another day.  That day came today, and it went into our beef vegetable barley soup.  Spectacularly delicious!

I made Enchladas this weekend.  Since my wife is a diabetic, I use the low carb Tortillas.  She has never had an issue when I use those.  Sorry, I forgot to take a picture.

They say it’s therapeutic.  A slice of warm homemade bread with a big lump of melting butter.   The therapeutic part I think is the nice pour of JD SBBP with a small cube that goes with it.

Same here!  We do taco night at least a couple times per month.  Littlesmokinjoe began requesting the carb balance tortillas in addition to standard.  Couldn’t really tell a difference, so we just use the lo carb ones for everyone.

OH, MAN!!!!   Seeing this pic brings me back to the loaves of 'real bread' my sainted Momma used to make.   Man, us kids loved to grab one of the loaves, fresh from the oven, as she screamed at us to let it cool before slicing it, and slather some butter on it (which melted instantly!) and bury our little faces in it!.   That bread was soooooo much better than the crap from the grocery store!   (Of course I didn't know then I shouldn't be eating regular bread, with it's gluten load.)

Another great idea for leftover brisket.  I hadn't though of that.   I usually slice, freeze and vac-seal the flat into serving size portions, and the entire point for burnt ends later.     We reheat slices in the sous-vide, or covered in the oven with some beef broth.   I like to dice it up and serve over Nachos...

I worked a couple smokers today.

Pork belly, smoked ham, and Mrs Skinsfan's jalapeno cornbread.

We didn't eat all of it😁

I'm making sliders at our tailgate on Sunday...

We are getting the remnants of @flahute’s bomb cyclone tonight. 😀 Then another atmospheric river behind that. We will be wet until Tuesday or Wednesday. So comfort food comes out. Sauté some vegetables. Four pounds of chicken thighs and a couple cups of lentils. Tumeric and cumin provide the spice. Chicken stock and some tomato paste to tie everything together.
