To borrow Joe's descriptor, this is an elegant whiskey with full flavor and all around balance. It doesn't punch you in the mouth or bowl you over. It just quietly satisfies. garbanzobean Posted August 9, 2016 Share Posted August 9, 2016 Was going to write up formal tasting notes in the Tasting Notes section, but decided to get to know the bourbon a bit first. Just cracked open the Tom's Foolery Single Barrel Bonded Bourbon, barrel 40 (bottle 205 if it matters). Nose: apple cider vinegar, apple brandy, beeswax (think Clynelish levels of wax for you scotch folks), baking spices, and some sweet candy corn pushing its way through. Honestly if I smelled this blind I would likely mistake this for apple brandy. It is different, but it is a very nice nose. It noses older than 4 years. Palate: prickly but not hot. Hard cider, prickly alcohol, candy corn sweetness. Finish is of apples, oak, and baking spices. Man is this an odd duck. It tastes like it was finished in apple brandy barrels. I had a single barrel of blantons once that was mild and loaded with apple flavor, but it had more oak to drag the flavor profile back into bourbon land. None of the metallic pot still grossness that seems to show up in younger Woodford Reserve releases. Overall I'd say this is lovingly made spirit that will really appeal to those of us who get a kick out of tasting something new and different. I hesitate to recommend a bottle of whiskey based on a single tasting, but there are some on this forum who immediately come to mind as being perfect unsuspecting victi . . . tasters. Great young bourbon that is already starting to develop personality and complexity not seen in 4yr old spirit from the big boys, looking forward to getting to know the bottle a bit better. Work was a bummer for a birthday but I rectified that with a nice pour after work. A colleague also has his birthday today and we have a tradition of going out for a whiskey after work on our birthday so I kicked off the celebration with a Rock Hill Farms. Then went out for dinner with my wife at a nice new Italian place. Started with a nice cocktail there - a Paper Airplane. I suppose that's for the cocktail forum, but it contained Buffalo Trace so I'll go with that. Then some wine and a very nice amaro as an apertif. Now back at home and I'm into the '14 Stagg again. Happy belated Birthday, Steve. Mine is tomorrow, and I plan to have a little GTS, some PVW15, and maybe open up the WLW I haven't tried yet. I've been putting off the end of this one to do side by side with another store pick that never seems to be coming into the store (I helped taste this pick); but I just can't spare the space any longer. I'd expect most of their whiskey to continue to be released at 4+ years from this point on. I believe I paid $50 for it, which would be high for what it is if it were from one of the big boys. But I like the folks at Tom's Foolery, and I want to support them. And if you can coexist the grainy quality that pure pot still bourbon seems to possess, it really is good stuff. I added a bit of water to a second small pour, and a ton of nice rye spice showed up. But I lost most of the apple flavors, so I'm not sure what the best practice is. Glad to have it in the lineup as a palate curveball. As to the price: To put things into perspective, a lot of folks are happy paying $130+ for single casks of 3-5 year old Kilchoman to get a peat/sherry bomb that one could get elsewhere for much cheaper (keep in mind this is my personal opinion on Kilchoman, and you know what opinions are like . . . ). This has to be one of the first single barrel releases of BIB Tom's Foolery Bourbon, so I'll happily drop $50 on that. It's good quality and very different from what the big guys are doing, which justifies a price premium for me, at least until they have enough aged stock for me to really start picking nits. I'm lucky that a number of the local stores in my area are still putting the age stated (rear label) on the shelves for $25-28 a fifth. I've stocked up and have a dozen or so in the bunker...
