I figured if it was exceptional, I'd open it. Otherwise I'll just keep it on display in the Skins man-cave. I'm not sure what "EWSiB" is. If you're talking about the Bottled-in-Bond, we always have a 1.75l bottle on hand. Since HHBIB was discontinued, it's been our "go-to" for cheap bourbon. Sure they’d change a bit batch to batch, but Kulsveen was a master blender that knew how to build a profile. Now Willet is challenged to keep those profiles with their own younger juice blended with sourced bourbons until they fade them out completely. Willett has historically and still to this day closely guards its sources. The current offerings fall short of the past and I haven’t bought a Willett product in several years because the magic just isn’t there right now. However, I’m hopeful they will figure out how to recapture the old profiles. I believe this year will allow for a WFE 8 or 9 year bourbon, which I’d be eager to get my hands on. I still have a little original 9.5 and 11 year WFE and they are phenomenal pours IMO. Biba! Joe I’m pretty sure the wheated, if I remember correctly it has wheat on the very simple label. Like another person in the old thread I thought this was comparable to Jefferson’s Presidential 17/18 (both of which I had). All of these were very pleasant with nothing offensive at all. By that I mean, it had a strong burn and bite to it, even though it had a lower proof. Could have been the barrel. Even though they shoot for a standard profile based on the vintage for the year, it is still a human task. It could also be that my palate was off and I moved on too soon. Given the price, it was easy to move on. You have heard it before and it is true. Each of our bourbon journeys is different and our palates are constantly changing. We had a Knob Ck 15yr 100p, and a Doc Swinson's 15 yr 114p. After slightly proofing down the 114p sample to try and level the playing field, we found them the same in color, similar in nose, taste profile, and finish. before we knew what they were, we all 4 decided we liked the KC a hair better. It was a little more round and full, with less ethanol bite. After 45 min. or so of air time, a couple of us felt the Doc Swinsons was getting better with time, and tasting even more similar to the KC15. A couple hrs later, I'm still enjoying the remnants of the samples, and still give a very slight nod to the KC. After this second comparison of an aged KC to the "mystery" 15yr stuff with the 78.5/13/8.5 mashbill (hunt and gather, doc swinsons, etc), My guess would have to go with Beam as the distiller of this stuff. FWIW, my 2021 Weller Blend is equal parts OWA, Weller SR, and Weller 12, and tips the scales at approximately 95 .67°, which is basically the same as Weller CYPB. I have handles of OWA, Weller 12 and Weller SR at my beck and call. Should I make up three family sized bottles of my 2021 Weller Blend now, or should I wait a while? I’ve been mentioning retirement a lot lately. If all goes well, my tentative retirement date will be sometime around the first part of August or September. “Lord willing, and the creek don’t rise.” Biba! It drinks below it’s 123.4 proof and has a nice sweetness to it. I would love to see what this would be like at 7 years or older, but even at 5 years it tastes great to me.
