It's 18 year so it will have some tannins for sure. Definitely an Oak bomb. But in a balanced way that keeps it in check. That's just me however. Again, I'd far rather see Barton re-invigorate the old 6-year BiB Very Old Barton. I've had all of the 1792 lineup except that one, and the 12 year. Sweet Wheat is the most boring one, I agree 1000%. We may occasionally see the BIB or Single Barrel but rarely. I have never seen the High Rye or Sweet Wheat. My wife likes the standard 1792 for bourbon mules so we always have a bottle on hand. I occasionally will try a neat pour. I guess thinking it will different than the last time. But, alas, it is not in my wheelhouse. However, I have enjoyed every BIB or Single Barrel I have had. Full Proof, not so much. Standard or Store Pick. Full Proof always seems out of balance. This mashbill sings at around 100 proof. I guess I could try blending the standard 93.7 with the Full Proof to establish another data point along the proof curve. Kepler Posted November 2, 2024 Share Posted November 2, 2024 We're having BBQ tonight so I poured my favorite whiskey for BBQ... Baker's 7. This one is the newer single barrel. For me, Baker's is in that rare "dessert island" category, meaning (whether it's my favorite bourbon or not), it's one of those very balanced ones that I would never get tired of drinking if that's the only one I could have forever. 1 Link to comment Share on other sites More sharing options...

As the cube melted the whiskey didn’t hold up. Tonight several drops of water trying to catch that magic. Ok, some friendly advice. I drink most of my whiskey neat. But when I'm drinking something that needs dilution like Booker's or Old Forester Barrel Proof, I like it with some water or a cube of ice. If you are going to add ice, then I recommend you remove the cube(s) from the glass at the point in time you obtain the taste you are looking for. If you leave them in past that, it will just destroy the taste. If I'm using small cubes from the ice maker, just throw them away in the sink. If I'm using a special "big cube" that I made myself, I will put the big cube back into the ziplock bag that it came from, back into the freezer, ready for my next pour. Good luck. The icemaker in our crapola Samsung fridge makes banged up cubes resulting in some smaller chips of ice, which are perfect for dropping into higher proof whiskey without over-dilution. I have another tack, when it comes to the large cube. I drink faster Probably not good advice..... I will put in a few small cubes and keep sampling until it hits the sweet spot. My icemaker also bangs up the little cubes a little so sometimes a sliver or two is all it takes.
